Taco Soup

Ingredients:

1 lb ground beef
1 small onion, chopped
1 (15 oz) can kidney beans, undrained
1 (15 oz) can pinto beans, undrained
1 (15 oz) can corn, undrained
1 (8 oz) can tomato sauce
1 (12 oz) can diced tomatoes, undrained
2 cups beef broth
1 (4 oz) can diced green chilies, undrained
1 packet taco seasoning
1 packet ranch dressing mix
Optional toppings: shredded cheese, sour cream, chopped green onions, tortilla chips

Directions:

In a large soup pot, brown the ground beef and chopped onion over medium-high heat until the meat is no longer pink. Drain any excess grease.

Add the kidney beans, pinto beans, corn, tomato sauce, diced tomatoes, beef broth, diced green chilies, taco seasoning, and ranch dressing mix to the pot. Stir well to combine all the ingredients.

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-30 minutes, allowing the flavors to meld together. Stir occasionally.

Serve hot, garnished with your choice of shredded cheese, sour cream, chopped green onions, and tortilla chips.
